Quick & Easy Recipe: Homemade Pickled Beets

Let the BEET (recipe) drop!


These are super easy to make, and taste delicious! They're great as a side, or if you're like me, you can eat them on their own. I personally like my pickled goods to be a bit tart, but if you prefer a sweeter taste, you can add more sugar to your mixture.

(Note: this photo was taken shortly after bottling, so the onions hadn't picked up the colour from the beets as yet. Don't worry, they become totally purple about 24 hours later!)


Pickled Beets

(makes one 24 oz. jar)


You will need:

  • 6-8 medium sized beets

  • white vinegar

  • 1/4 tsp. black pepper

  • 1 1/2 tbsp. brown sugar

  • pinch of salt

  • 1 small white onion, diced

  • 1 glass jar

  • 4-6 whole cloves (optional)


Method:

  1. Scrub beets. Do not cut or peel skin. Add to pot, ensuring they are completed covered with water. Boil for 1 hour or until completely cooked.

  2. Once cooked, remove from pot and allow to cool. Remove skin, and cut into slices or cubes.

  3. Place beet pieces and diced onion into your jar (it MUST be glass) and then pour white vinegar in to cover beets.

  4. Add your salt, black pepper, brown sugar and cloves. If you prefer a sweeter taste, add more sugar. Shake jar well until ingredients are thoroughly mixed.

  5. Place in fridge overnight, then it will be ready to consume.

Keep in fridge for up to 6-8 weeks. Enjoy!
